Questions

Why isn't MD5 included?

Browsers' built-in Web Crypto API doesn't offer MD5 because it is broken for security use. SHA-256 is the usual choice.

Should I hash passwords with SHA-256?

No. Use a slow, salted algorithm such as Argon2, bcrypt or scrypt on your server.

Is the text hashed as UTF-8?

Yes. The same text gives the same hash as sha256sum or Node's crypto on a UTF-8 file.
